Afternoons with Mama

Hello, sweets!! ūüôā Another week is about to come to an end again and here I am working on my third blog!! YAY! I know it seems like a long time from now but I plan to post entries from my recent trip back home before April 2015 (trust me, in my book this is like a month away). ¬†Anyway, today I am writing an entry for my Mom, who just celebrated her birthday a couple of days ago. As you all know, I really hate missing special occasions with my family,and sometimes I feel like I’ve been unfair to my Mom cause I’ve missed a couple of her birthdays, and have been away for Mother’s Day for a number of times already.

I know I am a self confessed Daddy’s Girl but I feel like deep down, I am also a Mama’s Girl — we all are,actually.¬†As soon soon as we grow inside our Mom’s body, there is this special bond that we can share to anyone else but her. When I was a kid, I’ve always looked up to my Dad for doing everything for us. But as I grew older, I have also realized that my Mom has¬†managed¬†to do everything for my Dad, my siblings, and I. And if I can be half of the woman that she is now when I have my own family, I would be the happiest.

I do not want to end the year without posting anything for my Mom’s birthday so I’ve decided to post a little throwback of the afternoons that we’ve spent together when I was home.

Below are some of the dishes that I made this past February.

I love using fresh and healthy ingredients.I try to make my dishes healthier,sometimes I even substitute just so I can indulge.

IMG_4180AApple and Cinnamon is one of my favorite flavor combinations. The smell of apple caramelizing with sugar and cinnamon is heaven to me.

My parents think otherwise. They do not like cinnamon and it’s very seldom that they will eat something ¬†with cinnamon. So whenever I have the chance to use cinnamon, I do it!

I really think that disliking an ingredient to the  extent of acting grossed out (and extremely annoying) about it is just a state of mind.

Hosting afternoon tea at home leaves us with a lot of bread trimmings. Being the frugal person that I am, I can’t let them go to waste.

I like making bread pudding, when we have too much bread at home. I love seeing trimmings come together and turn out into one good bread pudding.

My Mom was not bothered about the cinnamon at all. She likes it when I make bread pudding. The sweetness from the caramelized apple saved me from her lecture of why I put cinnamon.

February was all about the basics, actually this year is all about the basics.

I love gnocchi and if I can eat gnocchi everyday without feeling guilty about it, I WOULD!

This was my first attempt of making gnocchi at home. I focused on the texture and the flavor when I made it. So it does not look like the best looking gnocchi. Thanks to Mario Batali for gracing us with a heavenly recipe, I was able to make my Mom love gnocchi!

I made 2 kinds, one with tomato sauce, her favorite….

….and my version of Nordstrom’s Chicken and Mushroom Gnocchi

and to give it a touch of “me”, I added truffle oil at the end! This is my ultimate favorite! Chicken, mushrooms, and parmesan! AAAAAH!!!!

Jejekid (my brother) loves bread pudding as well. He like classic bread pudding, with CHOCOLATE!

We did not have a lot of bread when I made this, so the slices look a little thin.

To Mama,

I hope I can stay youthful (just like what A says) and fun like you 20 years from now. I am so lucky to have a Mom like you who I can be crazy with.
